Dump Valve / Temp Issues

I fitted a Forge Dump Valve to my Turbo 2000 and its been good no issues, I recently changed the hose to a new one, new clips and the bung, really tight and now the temp goes up and down like a yo-yo. Is there suspose to be a breather installed somewhere? If so why provide the bung? I slackened off the bung and the temp is almost normal now, occasionally goes up and down.
