Question ecu codes?

Hi I just found out about how to find ecu codes on a classic impreza. (black connectors)

I'm having a problem with my car so I tried this.

The idle dips to almost cutting out when stopped at the lights sometimes it does cut out and give a cel.

Sounded like maf to me so to be sure I tried to read the ecu codes it gave me a code 21 (engine coolant temp sensor).

Im wondering what way these codes come up aswell is it the last code it received the first to come up?

And would an old code still show up if it has been fixed and ecu is not reset?

Sorry for asking so much just not sure how it works
